Mayonnaise

Please note that all ingredients must be the same temperature or the
egg will curdle!

3 egg yolks
1 level tbsp mustard
1/2 tsp salt
1/2 tsp sugar
1/3 cup apple cider vinegar
1 tbsp Worcestershire sauce
1 cup olive oil
2 tbsp hot water (optional)

Mix egg yolk, mustard, vinegar, Worcestershire sauce, salt and sugar with handheld mixer or whisk. Whisk constantly while very slowly adding oil. 2 tbsp hot water may be added at the end to lighten the mayonnaise.
