Claudia’s potato salad
Recipe
4 medium potatoes
1 onion, chopped finely
Fresh parsley and thyme to taste (if salad is to go with fish, substitute thyme with dill)
2 tbsp mayonnaise
3 tbsp Wirraninna Apple Cider Vinegar
3 tbsp olive oil
1 tsp ground pepper
Salt and sugar to taste
Boil potatoes, peel and cool. Halve potatoes and slice. Combine all other ingredients in a large bowl and mix well. Add potatoes in several stages, mixing between additions.
